- Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and poke several holes in each potato with a fork.
- Place the sweet potatoes on a baking sheet and bake for 45 to 60 minutes until fork-tender.
- Heat a tablespoon of olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute.
- Add diced mushrooms and cook for 5-7 minutes until golden brown. Then, add fresh spinach and stir until wilted.
- Transfer the mixture to a bowl, mix in softened cream cheese and half of the shredded cheese, and season with salt and pepper.
- Once the sweet potatoes are roasted and cool, slice them open lengthwise, scoop out some flesh, and mix it into the filling.
- Refill the sweet potato skins with the mixture and sprinkle the remaining shredded cheese on top. Bake for another 10-15 minutes.
