  2. While the bread is toasting, cut a ripe avocado in half, remove the pit, and scoop the flesh into a mixing bowl. Mash the avocado until creamy, season with a pinch of salt, then set aside.
  3. In a non-stick skillet, heat a little oil or butter over medium heat. Crack the eggs into the skillet and cook according to preference: sunny-side up or over-easy, for about 3–4 minutes.
  4. Once the bread is toasted, spread an ample layer of the mashed avocado evenly across each slice.
