  • ½ cup Kerrygold butter or unsalted butter
  • 2 tablespoons Creole Cajun seasoning or homemade mix
For the Sauce
  • 1 cup Clam juice or fish stock/vegetable broth
  • ½ cup White wine or chicken stock
  • 1 tablespoon Worcestershire sauce gluten-free if needed
  • 1 tablespoon Lemon zest
  • 1 tablespoon Lemon juice
  • to taste Hot sauce
For Garnish
  • ¼ cup Fresh parsley chopped
  • 1 loaf Crusty French bread for serving

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. Rinse the jumbo shrimp under cold water and pat them dry.
  3. Melt ½ cup of Kerrygold butter over medium-high heat in a large cast iron skillet.
  4. Add Creole Cajun seasoning, clam juice, white wine, Worcestershire sauce, lemon zest, lemon juice and hot sauce to the melted butter and bring to a boil before simmering for 5-7 minutes.
  5. Arrange the shrimp in a large baking dish and pour the sauce over them, ensuring they are well-coated.
  6. Bake uncovered for 10 minutes, then stir the shrimp and return to the oven for an additional 2-3 minutes until they turn pink and firm.
  7. Transfer to a serving platter, garnish with parsley, and serve with warm crusty French bread.
