Method
 

Instructions for Baked Potato Chicken and Broccoli Casserole
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss diced potatoes with olive oil, salt, and black pepper until coated.
  3. Spread seasoned potatoes evenly on a baking sheet and roast for 20–25 minutes.
  4. While the potatoes are roasting, bring a pot of water to boil and cook broccoli florets for 4–5 minutes.
  5. In a medium saucepan, melt butter over medium heat, add chicken and heat for 3–5 minutes.
  6. In a mixing bowl, combine sour cream, milk, garlic powder, onion powder, and half of the cheddar cheese.
  7. In a greased casserole dish, layer roasted potatoes, cooked chicken, and steamed broccoli.
  8. Pour the creamy sauce mixture evenly over the layered ingredients.
  9. Sprinkle the remaining cheddar cheese and grated Parmesan cheese on top.
  10. Reduce the oven temperature to 350°F (175°C) and bake for 20–25 minutes.
  11. Let the casserole rest for 5 minutes after baking.
  12. Optional: Garnish with chopped fresh parsley before serving.
