Instructions for Baked Potato Chicken and Broccoli Casserole
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss diced potatoes with olive oil, salt, and black pepper until coated.
- Spread seasoned potatoes evenly on a baking sheet and roast for 20–25 minutes.
- While the potatoes are roasting, bring a pot of water to boil and cook broccoli florets for 4–5 minutes.
- In a medium saucepan, melt butter over medium heat, add chicken and heat for 3–5 minutes.
- In a mixing bowl, combine sour cream, milk, garlic powder, onion powder, and half of the cheddar cheese.
- In a greased casserole dish, layer roasted potatoes, cooked chicken, and steamed broccoli.
- Pour the creamy sauce mixture evenly over the layered ingredients.
- Sprinkle the remaining cheddar cheese and grated Parmesan cheese on top.
- Reduce the oven temperature to 350°F (175°C) and bake for 20–25 minutes.
- Let the casserole rest for 5 minutes after baking.
- Optional: Garnish with chopped fresh parsley before serving.
