  • 2 large eggs at room temperature
  • 3/4 cup white sugar can substitute with honey or maple syrup
  • 1/2 cup sour cream can substitute with yogurt
  • 1 1/2 cups oat flour can replace with a gluten-free flour blend
  • 1 teaspoon baking powder check for freshness
  • 1/2 teaspoon baking soda check for freshness
  • 1 pinch salt
  • 1 scoop vanilla protein powder optional
  • 1 cup semi-sweet chocolate chips reserve some for topping

Step-By-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare your muffin tin.
  2. Mash 2-3 very ripe bananas in a large mixing bowl until mostly smooth with a few chunks.
  3. Add 2 large eggs, ¾ cup white sugar, and ½ cup sour cream to the bananas. Whisk until just combined.
  4. Stir in 1 ½ cups oat flour, 1 teaspoon baking powder, ½ teaspoon baking soda, a pinch of salt, and 1 scoop of vanilla protein powder if using.
  5. Gently fold in 1 cup semi-sweet chocolate chips, reserving a few for topping if desired.
  6. Fill muffin tins about ¾ full with batter and sprinkle reserved chocolate chips on top.
  7. Bake for approximately 18-20 minutes, or until a toothpick comes out clean.
  8. Let muffins cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
