Step‑by‑Step Instructions for Bang Bang Fried Rice
  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the diced chicken and sear for about 5-7 minutes until golden brown. Remove from skillet.
  2. In the same skillet, add more oil if necessary, then crack in the eggs and scramble for 2-3 minutes until just set. Transfer to the plate with chicken.
  3. Add remaining oil to the skillet and sauté frozen peas and carrots for about 3-4 minutes until vibrant and just tender.
  4. Add the cold, day-old rice to the skillet, breaking up clumps and allowing it to crisp slightly on the bottom for about 4-5 minutes.
  5. Mix in the seared chicken and scrambled eggs, stirring gently to combine and reheat for 2-3 minutes.
  6. In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and soy sauce until blended.
  7. Pour the sauce into the skillet with the rice and toss everything until evenly coated and heated through for about 2-3 minutes.
