For the Sweet Potatoes
  • 2 large Sweet Potatoes Can substitute with Yukon gold or red potatoes.
  • 2 tablespoons Olive Oil Avocado oil can be used as an alternative.
For the Chicken
  • 2 large Chicken Breasts Grilled tofu or tempeh can be used for a vegetarian option.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup BBQ Sauce Use your favorite brand or homemade.
For the Bowl Assembly
  • 1 can Black Beans Any canned or cooked beans will work.
  • 1 cup Corn Kernels Fresh, canned, or frozen.
  • 1/2 cup Red Onion Finely chopped.
  • 1 medium Avocado Can be swapped with guacamole or omitted.
  • 1/4 cup Fresh Cilantro Optional based on preference.
  • 2 wedge Lime For serving.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Wash and prepare the sweet potatoes by piercing them with a fork and rubbing with olive oil, salt, and pepper. Bake for 40-45 minutes.
  3. While sweet potatoes bake, heat a skillet over medium heat, season and sear chicken breasts for 6-7 minutes on each side until cooked through.
  4. Let chicken rest for a few minutes, then dice and coat in BBQ sauce.
  5. Mix black beans and corn in a separate bowl.
  6. Remove sweet potatoes from the oven, slice them open, and fluff the insides.
  7. Assemble your bowls with the fluffed sweet potato, BBQ chicken, beans, corn, red onion, avocado, and cilantro.
  8. Serve with lime wedges on the side and enjoy!
