Preparation Steps
- Preheat your oven to 400°F (200°C).
- Wash and prepare the sweet potatoes by piercing them with a fork and rubbing with olive oil, salt, and pepper. Bake for 40-45 minutes.
- While sweet potatoes bake, heat a skillet over medium heat, season and sear chicken breasts for 6-7 minutes on each side until cooked through.
- Let chicken rest for a few minutes, then dice and coat in BBQ sauce.
- Mix black beans and corn in a separate bowl.
- Remove sweet potatoes from the oven, slice them open, and fluff the insides.
- Assemble your bowls with the fluffed sweet potato, BBQ chicken, beans, corn, red onion, avocado, and cilantro.
- Serve with lime wedges on the side and enjoy!
