- Preheat your oven to 350°F (175°C) and ensure a 10-inch tube pan is ungreased.
- Combine cake flour, 1/2 cup of sugar, and a pinch of salt in a mixing bowl. Sift twice.
- Beat egg whites until foamy, add cream of tartar, and beat until soft peaks form.
- Gradually incorporate remaining sugar, one tablespoon at a time, beating until stiff peaks form.
- Gently fold in strawberry extract and food coloring until evenly mixed.
- Sift one-third of the flour mixture over the egg whites and fold in gently. Repeat until all flour is incorporated.
- Spoon batter into the prepared pan and smooth the top. Bake for 35-40 minutes till golden.
- Cool the cake upside down for at least 1 hour.
- Run a knife around the edges of the pan to release the cake and place on a serving platter.
- Frost as desired, optionally adding rainbow sprinkles for decoration.
