Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. Bring a large pot of salted water to a boil, then add penne pasta and cook until al dente, about 8–10 minutes. Drain and set aside.
  3. Whisk together buffalo sauce and Greek yogurt in a mixing bowl until smooth.
  4. Fold in shredded chicken, penne pasta, and half of the mozzarella cheese. Season with salt and pepper.
  5. Pour the mixture into the prepared baking dish, top with remaining mozzarella and sprinkle with Parmesan if using.
  6. Bake uncovered for 20–25 minutes until hot, bubbly, and cheese is golden brown.
  7. Remove from oven, cool for a few minutes, garnish with green onions, and serve warm.
