- Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- Bring a large pot of salted water to a boil, then add penne pasta and cook until al dente, about 8–10 minutes. Drain and set aside.
- Whisk together buffalo sauce and Greek yogurt in a mixing bowl until smooth.
- Fold in shredded chicken, penne pasta, and half of the mozzarella cheese. Season with salt and pepper.
- Pour the mixture into the prepared baking dish, top with remaining mozzarella and sprinkle with Parmesan if using.
- Bake uncovered for 20–25 minutes until hot, bubbly, and cheese is golden brown.
- Remove from oven, cool for a few minutes, garnish with green onions, and serve warm.
