Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Toss diced sweet potatoes with 1 tablespoon olive oil, salt, and pepper in a mixing bowl. Spread on a baking sheet.
  3. Roast sweet potatoes in the oven for 20-25 minutes until tender and caramelized.
  4. Rub chicken breasts with 1 tablespoon olive oil and coat with Cajun seasoning.
  5. Cook chicken in a skillet over medium-high heat for 6-7 minutes per side until browned and cooked through.
  6. Sauté diced red onion, bell peppers, and broccoli in the same skillet for 5-7 minutes until tender-crisp.
  7. Assemble bowls with a base of sweet potatoes, layered with sautéed veggies and sliced chicken.
  8. Top with fresh cilantro and serve with lime wedges.
