- In a mixing bowl, combine soy sauce, hoisin sauce, rice vinegar, honey, Chinese five-spice powder, minced garlic, and fresh ginger. Whisk until blended.
- Add the chicken thighs to the marinade, ensuring they are coated evenly. Cover and refrigerate for at least 30 minutes.
- Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
- Remove the chicken from the marinade and arrange on the baking sheet. Dispose of the leftover marinade safely.
- Roast the chicken for 45-55 minutes, basting every 15 minutes with reserved marinade.
