Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Gather your ingredients and equipment, including a large skillet and a greased 9x13-inch casserole dish.
- In a large skillet over medium heat, add the lean ground beef and diced onions. Cook for about 7-10 minutes until browned and onions are translucent. Season with salt and pepper and drain excess fat.
- In a large mixing bowl, combine the browned ground beef, uncooked white rice, beef broth, cream of mushroom soup, and frozen mixed vegetables. Stir well for 2 minutes until everything is evenly coated.
- Transfer the mixture into the greased 9x13-inch casserole dish, spreading it evenly using a spatula.
- Sprinkle an even layer of shredded cheese over the top of the casserole.
- Cover the casserole dish tightly with aluminum foil and bake for 30 minutes.
- After 30 minutes, carefully remove the foil and return the casserole to the oven. Bake for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.
- Remove the casserole from the oven and let it cool for a few minutes before serving.
