  • 1 cup White Rice or brown rice with adjusted cooking times
  • 2 cups Beef Broth can substitute with water
  • 1 can Cream of Mushroom Soup or cream of chicken soup
  • 2 cups Shredded Cheese cheddar or favorite blend
  • 1 medium Onion diced
  • 2 cups Frozen Mixed Vegetables or seasonal vegetables
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and equipment, including a large skillet and a greased 9x13-inch casserole dish.
  2. In a large skillet over medium heat, add the lean ground beef and diced onions. Cook for about 7-10 minutes until browned and onions are translucent. Season with salt and pepper and drain excess fat.
  3. In a large mixing bowl, combine the browned ground beef, uncooked white rice, beef broth, cream of mushroom soup, and frozen mixed vegetables. Stir well for 2 minutes until everything is evenly coated.
  4. Transfer the mixture into the greased 9x13-inch casserole dish, spreading it evenly using a spatula.
  5. Sprinkle an even layer of shredded cheese over the top of the casserole.
  6. Cover the casserole dish tightly with aluminum foil and bake for 30 minutes.
  7. After 30 minutes, carefully remove the foil and return the casserole to the oven. Bake for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.
  8. Remove the casserole from the oven and let it cool for a few minutes before serving.
