- Preheat your oven to the temperature specified on the tater tots package, typically around 425°F (220°C). Spread the tater tots on a baking sheet in a single layer and bake for 20–25 minutes until they are golden brown and crispy. For a unique texture, lightly crush them with a spatula before removing them from the oven.
- While the tater tots are baking, heat a non-stick skillet over medium heat. Add your ground beef (or chosen alternative) and season with salt and pepper. Cook for 7–10 minutes, breaking it apart with a spatula until it’s browned and fully cooked. Drain any excess grease to keep your burritos from becoming soggy.
- In a large mixing bowl, combine the cooked meat, slightly crushed tater tots, and both cheddar and Monterey Jack cheeses. Mix these ingredients well until everything is evenly coated in cheese and the tater tots are well distributed.
- To ensure your tortillas are pliable, warm them in a dry skillet over low heat or microwave briefly for about 20 seconds.
- Take a warmed tortilla and spoon a generous portion of the filling mixture into the center. Drizzle a bit of chipotle sauce and add a dollop of sour cream on top.
