- In a large skillet, heat olive oil over medium heat. Slice the chicken sausage into bite-sized pieces and add them to the pan. Sauté for about 3–4 minutes until golden and slightly crispy. Remove sausage and set aside, keeping the oil in the skillet.
- In the same skillet, add diced red onion and cook for roughly 3 minutes until softened and translucent.
- Add minced garlic and stir for about 30 seconds until fragrant.
- Incorporate the orzo, stirring to coat with the mixture. Toast the orzo for about 1–2 minutes.
- Pour in chicken broth, bring to a gentle simmer, and cook for about 8–10 minutes until orzo is al dente.
- Add cooked chicken sausage and broccoli florets back into the skillet. Cover and steam for 3–4 minutes.
- Season with salt and pepper. Optionally, sprinkle parsley or Parmesan on top before serving.
