  • 1 cup Unsalted Butter Room temperature
  • 1 cup Sugar
  • 2 large Eggs Or substitute with flax eggs for vegan option
  • 1 teaspoon Vanilla Extract Or almond extract
  • 1/2 cup Water Can substitute with milk
  • 3/4 cup Natural Unsweetened Cocoa Powder Or Dutch-processed cocoa
  • 1 1/2 cups All-Purpose Flour Or gluten-free flour blend
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Milk Or non-dairy milk
For the Frosting
  • 1/2 cup Salted Butter Room temperature
  • 2 cups Powdered Sugar
  • 1/4 cup Cocoa Powder
  • 1/2 cup Pretzel Crumbs Crushed chocolate-covered pretzels can be used for decoration
  • 1 teaspoon Vanilla Extract Same substitutions apply as mentioned above
For the Ganache and Toppings
  • 1 cup Semi-Sweet Chocolate Chips Or dark chocolate
  • 1/2 cup Heavy Whipping Cream Can substitute with coconut cream

Method
 

Preparing the Cupcakes
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the unsalted butter and sugar until light and fluffy for 3-4 minutes.
  3. Add in the eggs, vanilla extract, and water, mixing until fully combined.
  4. In a separate bowl, sift together cocoa powder, flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing until smooth.
  6. Fill each cupcake liner about 2/3 full with batter and bake for 18-20 minutes.
  7. Allow cupcakes to cool completely in the pan.
Making the Frosting
  1. In a mixing bowl, beat together salted butter, powdered sugar, cocoa powder, and pretzel crumbs until fluffy.
  2. Add a little water if needed to adjust the consistency.
Assembling the Cupcakes
  1. Frost each cooled cupcake with the pretzel frosting.
  2. In a small saucepan, heat chocolate chips and whipping cream over medium-low heat until melted and smooth.
  3. Drizzle the ganache over the frosted cupcakes.
  4. Top each cupcake with sprinkles and a chocolate-dipped pretzel.
