  2. For frozen spinach, thaw and squeeze out moisture. For fresh spinach, sauté until wilted.
  3. In a large bowl, whisk together eggs, cottage cheese, milk, salt, pepper, and garlic powder.
  4. Fold spinach into the egg mixture and stir in cheddar cheese and optional parmesan or feta.
  5. Pour the mixture into the greased dish and bake for 35–40 minutes until golden.
