Step-by-Step Instructions for Crockpot Lasagna Soup
- Brown the ground beef with chopped onion and minced garlic in a large skillet over medium heat, about 6-8 minutes. Drain excess fat.
- Transfer the cooked beef mixture into the crockpot. Add marinara sauce, beef broth, dried basil, oregano, and crushed red pepper flakes. Stir until well mixed.
- Cover the crockpot and set it to cook on LOW for 5-6 hours or on HIGH for 3 hours.
- About 30 minutes before serving, break lasagna noodles into smaller pieces and stir into the soup.
- Once noodles are tender, stir in ricotta, mozzarella, and half of the Parmesan cheese until melted.
- Serve hot, garnished with remaining Parmesan and fresh herbs.
