Step-by-Step Instructions for Crockpot Lasagna Soup
  1. Brown the ground beef with chopped onion and minced garlic in a large skillet over medium heat, about 6-8 minutes. Drain excess fat.
  2. Transfer the cooked beef mixture into the crockpot. Add marinara sauce, beef broth, dried basil, oregano, and crushed red pepper flakes. Stir until well mixed.
  3. Cover the crockpot and set it to cook on LOW for 5-6 hours or on HIGH for 3 hours.
  4. About 30 minutes before serving, break lasagna noodles into smaller pieces and stir into the soup.
  5. Once noodles are tender, stir in ricotta, mozzarella, and half of the Parmesan cheese until melted.
  6. Serve hot, garnished with remaining Parmesan and fresh herbs.
