Cooking Steps
- Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente, about 8-10 minutes. Reserve ½ cup of pasta water before draining.
- In a food processor, combine ripe avocados, minced garlic, lemon juice, olive oil, basil, salt, and black pepper. Blend until smooth and creamy.
- Gradually add reserved pasta water to the avocado sauce, blending until desired consistency is reached.
- Return drained spaghetti to pot over low heat and pour the avocado sauce over it. Toss until evenly coated.
- Serve immediately, garnishing with olive oil, salt, cherry tomatoes, and fresh basil.
