  • 1 can Cream of Mushroom Soup
  • 1 cup Sour Cream or Greek yogurt
  • 2 cups Grated Cheddar Cheese plus more for topping

Step-by-Step Instructions
  1. Season the chicken breasts generously with salt and pepper. Heat oil in a skillet until shimmering. Cook the chicken for about 8-10 minutes until no longer pink.
  2. Allow the chicken to rest for a few minutes before cubing. In a bowl, combine cubed chicken, potatoes, cream of mushroom soup, sour cream, and cheddar cheese. Mix well.
  3. Preheat oven to 350°F (177°C). Grease a casserole dish and transfer the mixture into it, smoothing the top.
  4. Bake in the oven for approximately 45 minutes until the top is golden brown and potatoes tender.
  5. Remove from oven and add cheddar cheese on top. Return to oven and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  6. Let the casserole rest for a few minutes before serving. Enjoy!
