- Season the chicken breasts generously with salt and pepper. Heat oil in a skillet until shimmering. Cook the chicken for about 8-10 minutes until no longer pink.
- Allow the chicken to rest for a few minutes before cubing. In a bowl, combine cubed chicken, potatoes, cream of mushroom soup, sour cream, and cheddar cheese. Mix well.
- Preheat oven to 350°F (177°C). Grease a casserole dish and transfer the mixture into it, smoothing the top.
- Bake in the oven for approximately 45 minutes until the top is golden brown and potatoes tender.
- Remove from oven and add cheddar cheese on top. Return to oven and bake for an additional 10-15 minutes until cheese is melted and bubbly.
