- Place the chicken breasts in your crockpot. Season with garlic powder, onion powder, salt, and black pepper. Add chicken broth, Rotel, and cream of chicken soup. Cook on LOW for 6 hours or HIGH for 3-4 hours until chicken is tender.
- Remove the chicken, shred it using two forks, and return to the crockpot. Stir in cream cheese and cheddar cheese. Allow to melt for about 15 minutes, creating a creamy sauce.
- In a large pot, boil salted water and add spaghetti noodles. Cook according to package instructions until al dente. Drain and toss into the crockpot, mixing well with the sauce.
- Let the crockpot sit on warm for a few minutes. Serve hot, garnishing with extra cheese or fresh parsley if desired.
