For the Cheesy Sauce
  • 8 ounces Cream cheese Essential for creamy texture.
  • 2 cups Cheddar cheese Alternatives include Monterey Jack, Colby Jack, or Pepper Jack.
For Flavor
  • 1 teaspoon Garlic powder Fresh garlic can be substituted.
  • 1 teaspoon Onion powder Swap for diced fresh onions if preferred.
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
For the Pasta
  • 12 ounces Spaghetti noodles Can substitute with penne, fettuccine, or rotini.

Method
 

Cooking Instructions
  1. Place the chicken breasts in your crockpot. Season with garlic powder, onion powder, salt, and black pepper. Add chicken broth, Rotel, and cream of chicken soup. Cook on LOW for 6 hours or HIGH for 3-4 hours until chicken is tender.
  2. Remove the chicken, shred it using two forks, and return to the crockpot. Stir in cream cheese and cheddar cheese. Allow to melt for about 15 minutes, creating a creamy sauce.
  3. In a large pot, boil salted water and add spaghetti noodles. Cook according to package instructions until al dente. Drain and toss into the crockpot, mixing well with the sauce.
  4. Let the crockpot sit on warm for a few minutes. Serve hot, garnishing with extra cheese or fresh parsley if desired.
