  • 3 cloves Garlic minced
  • 4 cups Chicken Broth vegetable broth for vegetarian option

  • 1 cup Ricotta Cheese can substitute with cottage cheese
  • 1 cup Mozzarella Cheese low-fat mozzarella as an option
  • 1/2 cup Parmesan Cheese can use nutritional yeast for dairy-free
For the Noodles and Greens
  • 9 oz Lasagna Noodles broken into pieces
  • 1 can White Beans canned cannellini or navy beans
  • 4 cups Spinach can substitute with kale
Seasoning

Method
 

Steps
  1. Brown the sausage by heating a large pot over medium heat and cooking it for 5–7 minutes until browned.
  2. Sauté onion and garlic in the same pot for about 3 minutes until the onion is translucent.
  3. Add chicken broth and white beans, bring to a boil, then reduce to a simmer for 5 minutes.
  4. Stir in heavy cream, spinach, ricotta, mozzarella, and parmesan; simmer for an additional 5 minutes.
  5. Add broken lasagna noodles and cook for about 10 minutes until tender.
  6. Return the cooked sausage to the pot and heat through for an additional 5 minutes.
  7. Season with salt and pepper to taste, ladle into bowls, and serve immediately.
