Preparation Steps
  1. Start by dicing the potatoes into small, evenly sized cubes to ensure they cook uniformly. In a large bowl, season the potatoes with minced garlic, cumin, salt, and pepper to taste, making sure each cube is well-coated. Allow this mixture to sit for about 10 minutes.
  2. Heat a generous amount of oil in a large skillet over medium heat. Once the oil is shimmering, carefully add the seasoned potato cubes in a single layer. Sauté the potatoes for approximately 15 minutes, turning occasionally, until they are golden brown and crispy on all sides.
  3. While the potatoes are cooking, place a separate saucepan over low heat and add the refried beans. Stir the beans occasionally, allowing them to warm thoroughly for about 5 to 7 minutes. Adjust seasoning as desired.
  4. Take warm tortillas and spoon a generous amount of the refried beans onto the center of each. Top with the crispy potatoes, layering them for a hearty taco.
  5. Sprinkle freshly chopped cilantro over your tacos and squeeze a wedge of lime on top. Add shredded cheese or hot sauce if desired. Serve immediately.
