Step-by-Step Instructions for Crockpot Beef Stew
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add beef stew meat coated in all-purpose flour in batches, browning for about 4-5 minutes until each piece is a deep golden brown. Once browned, transfer the beef to the crockpot.
- In the same skillet, add sliced carrots, diced potatoes, chopped onion, and minced garlic. Stir and sauté for 2-3 minutes to soften the vegetables slightly. After cooking, add the vegetable mix to the crockpot with the browned beef.
- Pour in 4 cups of beef broth, followed by 2 tablespoons of tomato paste, 1 teaspoon of dried thyme, salt, and black pepper to taste. Stir everything together until evenly coated.
- Cover the crockpot and set it to low. Let your Crockpot Beef Stew simmer for 8 hours.
- About 30 minutes before serving, stir in 1 cup of frozen peas. Taste and adjust seasoning, adding more salt or pepper if needed.
- Once the cooking time is up, ladle the hearty stew into bowls and serve hot with crusty bread or over mashed potatoes.
