Step-by-Step Instructions for Crockpot Beef Stew
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add beef stew meat coated in all-purpose flour in batches, browning for about 4-5 minutes until each piece is a deep golden brown. Once browned, transfer the beef to the crockpot.
  2. In the same skillet, add sliced carrots, diced potatoes, chopped onion, and minced garlic. Stir and sauté for 2-3 minutes to soften the vegetables slightly. After cooking, add the vegetable mix to the crockpot with the browned beef.
  3. Pour in 4 cups of beef broth, followed by 2 tablespoons of tomato paste, 1 teaspoon of dried thyme, salt, and black pepper to taste. Stir everything together until evenly coated.
  4. Cover the crockpot and set it to low. Let your Crockpot Beef Stew simmer for 8 hours.
  5. About 30 minutes before serving, stir in 1 cup of frozen peas. Taste and adjust seasoning, adding more salt or pepper if needed.
