Step-by-Step Instructions
  1. Begin by patting your beef chuck roast dry and seasoning it with salt and pepper.
  2. In a skillet, heat oil and sear the roast for 3-4 minutes on each side until browned.
  3. Caramelize the onions in the same skillet, adding garlic in the last minute.
  4. Layer the seared roast in the crockpot, add onions, and pour beef broth over it.
  5. Sprinkle soup mix and thyme over the roast and arrange the potatoes and carrots around it.
  6. Cover and cook on LOW for 8-9 hours or HIGH for 4-5 hours until tender.
  7. Serve the roast and vegetables drizzled with the cooking liquid.
