- In a mixing bowl, combine ricotta cheese, grated Parmesan, chopped parsley, and the egg. Season with salt and pepper until smooth. Set aside.
- Brown the ground beef or Italian sausage in a skillet for 6-8 minutes. Sauté onions and mushrooms until soft, about 4-5 minutes. Drain excess fat.
- Lightly grease the crockpot. Spread a layer of marinara sauce on the bottom, add ravioli, ricotta mixture, meat and veggie blend, and mozzarella. Repeat layers.
- Pour remaining marinara sauce over the final layer and sprinkle with mozzarella cheese.
- Cover and cook on low for 6-8 hours or high for 3-4 hours. Monitor to prevent overcooking.
- Let the lasagna rest for 10-15 minutes before serving. Garnish with parsley or basil.
