- In a medium heavy-bottomed saucepan, add whole milk, granulated sugar, cocoa powder, and salt. Whisk together over medium heat until smooth and warm, about 5 minutes.
- Gently fold in cooked and cooled white rice, stirring carefully to coat with the chocolate mixture. Simmer on low heat for 15-20 minutes, stirring frequently.
- Remove from heat and stir in butter and vanilla extract. If using chocolate chips, fold them in now.
- Allow to rest in the pan for about 5 minutes for thickening.
- Spoon the pudding into serving dishes. Enjoy warm or refrigerate for a chilled treat.
