- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large bowl, combine ricotta cheese, cooked spinach, egg, 1 cup mozzarella, 1/4 cup parmesan, salt, and pepper. Fold in shredded chicken.
- Lay out each lasagna noodle, spread the filling, and roll tightly. Place seam-side down in the baking dish.
- Pour 1 cup of Alfredo sauce in the dish, arrange roll-ups seam-side down, drizzle remaining sauce and top with mozzarella and parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and broil for 2-3 minutes until golden.
- Let cool for 5-10 minutes before serving, garnished with parsley or basil.
