  • 12 oz Lasagna Noodles Use cooked or no-boil noodles.
  • 2 cups Cooked Chicken Leftover rotisserie chicken works well.
  • 15 oz Ricotta Cheese
  • 1 cup Cooked Spinach Squeeze out excess water.
  • 1 large Egg Can be omitted for a dairy-free version.
For Assembly
  • 2 cups Mozzarella Cheese Or substitute with shredded provolone.
  • 1/4 cup Parmesan Cheese Pecorino can be used as an alternative.
  • to taste Salt
  • to taste Pepper
  • 2 cups Alfredo Sauce Store-bought or homemade.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, combine ricotta cheese, cooked spinach, egg, 1 cup mozzarella, 1/4 cup parmesan, salt, and pepper. Fold in shredded chicken.
  3. Lay out each lasagna noodle, spread the filling, and roll tightly. Place seam-side down in the baking dish.
  4. Pour 1 cup of Alfredo sauce in the dish, arrange roll-ups seam-side down, drizzle remaining sauce and top with mozzarella and parmesan.
  5. Cover with foil and bake for 25 minutes. Remove foil and broil for 2-3 minutes until golden.
  6. Let cool for 5-10 minutes before serving, garnished with parsley or basil.
