Ingredients
  

For the Chicken Marinade
  • 4 Tbsp Extra Virgin Olive Oil
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Turmeric
  • 1 tsp Salt
  • 1 tsp Pepper
  • 4 pieces Chicken Thighs or Breasts Well coated in spice mixture.
For the Salad
  • 2 cups Cooked Rice Cooled and ready to crisp.
  • 1 cup Cucumber Diced.
  • 1 cup Tomatoes Chopped.
  • 0.5 cup Red Onion Thinly sliced.
  • 0.25 cup Fresh Parsley or Cilantro Chopped.
  • 1-2 Tbsp Fresh Lemon Juice To taste.
  • 1 cup Tahini Dressing Made with tahini, garlic, and lemon juice.

Method
 

Preparation
  1. In a medium bowl, combine olive oil, cumin, paprika, garlic powder, turmeric, salt, and pepper. Add the chicken and marinate for at least 30 minutes.
  2. Preheat your grill or skillet to medium-high heat. Cook the marinated chicken for 6-8 minutes per side until cooked through and golden brown. Let it rest, then slice or shred.
  3. In a skillet, heat 1 tbsp of oil over medium heat. Add the cooled cooked rice in an even layer and crisp it for 6-8 minutes. Stir occasionally.
  4. Prepare vegetables: dice cucumber, chop tomatoes, and slice red onion. Chop parsley or cilantro.
  5. In a bowl, whisk together tahini, garlic, lemon juice, and olive oil. Add water gradually until smooth. Chill for 10-15 minutes.
  6. In a large bowl, layer the crispy rice, sliced chicken, fresh vegetables, and herbs. Drizzle with tahini dressing and toss to combine. Serve immediately.
