Step-by-Step Instructions
  1. In a medium bowl or jar, combine white wine vinegar, apple cider vinegar, and sugar. Whisk or shake until sugar is dissolved. Gradually drizzle in olive oil while whisking until emulsified. Mix in honey and shallot.
  2. Preheat oven to 350°F. Spread pecans or almonds on a baking sheet in a single layer. Toast in the oven for 8-10 minutes until lightly golden and fragrant. Let cool slightly.
  3. In a large mixing bowl, add fresh baby spinach, followed by cooled toasted nuts and dried cranberries. Gently toss ingredients together.
