Preparation
- Gather your ingredients by chopping the garlic, onions, and mushrooms. Cut the chicken into uniform chunks for even cooking.
Cooking
- Melt a tablespoon of butter in a skillet over medium heat. Add the chicken pieces in a single layer and cook for 6-7 minutes until golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add a bit more butter if needed. Sauté the minced garlic and chopped onions for 2-3 minutes until translucent.
- Add the chopped mushrooms, stirring to combine and cook for about 5 minutes.
- Pour in the chicken stock and heavy cream, stirring well. Increase heat to bring to a simmer for 2-3 minutes.
- Return the cooked chicken to the skillet, season with thyme, salt, and pepper, and simmer for another 5-10 minutes.
- Garnish with freshly chopped parsley before serving.
