  • 1 cup Heavy Cream can substitute with half-and-half
  • 2 tablespoons Butter for sautéing
  • 1 cup Chicken Stock low-sodium or homemade preferred
For the Aromatics
  • 3 cloves Garlic freshly minced
  • 1 medium Onion can substitute with shallots
For Seasoning
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Thyme fresh
For Garnish
  • 1 tablespoon Parsley freshly chopped, optional substitutes include basil or chives

Method
 

Preparation
  1. Gather your ingredients by chopping the garlic, onions, and mushrooms. Cut the chicken into uniform chunks for even cooking.
Cooking
  1. Melt a tablespoon of butter in a skillet over medium heat. Add the chicken pieces in a single layer and cook for 6-7 minutes until golden brown.
  2. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add a bit more butter if needed. Sauté the minced garlic and chopped onions for 2-3 minutes until translucent.
  4. Add the chopped mushrooms, stirring to combine and cook for about 5 minutes.
  5. Pour in the chicken stock and heavy cream, stirring well. Increase heat to bring to a simmer for 2-3 minutes.
  6. Return the cooked chicken to the skillet, season with thyme, salt, and pepper, and simmer for another 5-10 minutes.
  7. Garnish with freshly chopped parsley before serving.
