- In a large mixing bowl, combine cubed chicken thighs with vegetable oil, garlic powder, and salt and pepper. Dust with cornstarch. Allow to sit for 10 minutes.

- In the same pan, stir-fry sliced bell peppers for 2-3 minutes. Add minced garlic and ginger, stirring until fragrant.
