  • 1 cup Peas Fresh or frozen.

  • 1 block Tofu Cubed or substitute with chickpeas or edamame.

Step-by-Step Instructions
  1. Prepare all your ingredients. If using fresh rice, cook it and let cool; otherwise, use day-old rice.
  2. Heat sesame oil in a skillet over medium-high heat. Cook cubed tofu for 5-7 minutes until golden brown. Set aside.
  3. In the same pan, stir-fry carrots, bell peppers, and peas for 3-5 minutes until just tender.
  4. Add cooled rice and pineapple chunks; stir and cook for 3-4 minutes.
  5. Pour in soy sauce and mix well. Fold in the crispy tofu and cook for 2 more minutes.
  6. Serve hot, garnished with green onions or sesame seeds.
