Step-by-Step Instructions
  1. In a small bowl, whisk together the extra-virgin olive oil, lemon juice, minced garlic, dried oregano, dried thyme, Dijon mustard, kosher salt, and black pepper to create the marinade.
  2. Place the chicken thighs in a large bowl and pour the marinade over them, ensuring they are fully coated. Cover and refrigerate for 1 to 2 hours.
  3. Preheat the oven to 350°F (180°C) while the chicken marinates.
  4. Arrange the marinated chicken thighs in a baking dish and pour any remaining marinade over them. Bake for 40 to 45 minutes.
  5. For crispy skin, broil the chicken for the last 2 to 3 minutes until golden brown.
