  • 3/4 cup Ketchup extra for topping

  • 1 tsp Garlic Powder or fresh garlic
  • 1 tsp Dried Oregano or double the amount of fresh oregano
  • 1 large Egg or a flaxseed egg for vegan option
For the Topping
  • 1/2 cup Ketchup or barbecue sauce
  • 1 tbsp Brown Sugar or honey/maple syrup
  • 1 tbsp Mustard Dijon or yellow mustard
  • 1 tbsp Worcestershire Sauce or soy sauce for gluten-free

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare the muffin pan by spraying with non-stick cooking spray or lining it.
  2. In a large mixing bowl, combine ground beef, Italian breadcrumbs, Parmesan cheese, and milk, then add ¼ cup of ketchup, onion, bell pepper, garlic powder, oregano, salt, pepper, and the egg. Mix gently until combined.
  3. Divide the mixture evenly among the muffin cups, filling them about three-quarters full and gently pressing the mixture.
  4. In a separate bowl, whisk together the topping ingredients and spoon the mixture over each meatloaf muffin.
  5. Bake for 20-25 minutes until the internal temperature reaches 160°F (70°C) and the tops are bubbly.
  6. Remove from the oven and let cool for about 5 minutes before transferring to a wire rack.
