Step-by-Step Instructions
  1. In a medium mixing bowl, combine 1 cup of almond flour, 4 tablespoons of maple syrup, and 1 teaspoon of vanilla extract. Use a fork to blend until a crumbly dough forms.
  2. Line an 8” x 8” pan with parchment paper, then evenly press the mixture into the bottom of the pan.
  3. In a separate bowl, add 1 cup of coconut cream, 2 tablespoons of maple syrup, and 2 tablespoons of collagen peptides. If clumpy, warm in the microwave for about 10-15 seconds.
  4. Mix thoroughly until smooth and creamy, then fold in 1 cup of fresh blueberries.
  5. Pour the blueberry filling over the prepared crust, using a spatula to spread it evenly and tap to settle the filling.
  6. Cover with plastic wrap and refrigerate for a minimum of 8 hours, or overnight.
  7. Slice into squares using a sharp knife for clean edges, and serve chilled.
