  • 1 pound Lean Ground Turkey can substitute with chicken or extra-lean beef
  • 1 medium Red Onion can use yellow onion
  • 1 can Canned Diced Tomatoes with juice, crushed tomatoes for smoother texture
  • 1 can Tomato Sauce can substitute with low-sodium or homemade sauce
  • 1 cup Chicken Stock or Water vegetable stock for vegetarian version
Seasoning
  • 1 tablespoon Chili Powder can use a mix of mild and hot varieties
  • 1 teaspoon Cumin Powder consider smoked paprika for more flavor
  • 1 teaspoon Garlic Powder can use fresh garlic
  • 1 teaspoon Dried Oregano Italian seasoning blend is a substitute
  • to taste Fine Sea Salt
  • to taste Black Pepper freshly ground recommended
Beans and Veggies
  • 1 can Black Beans rinsed and drained
  • 1 can Kidney Beans or any preferred bean blend
  • 1 can Pinto Beans
  • 1/2 cup Diced Jalapeños or Mild Green Chilis, adjust for spice preference
  • 1 can Canned Corn fresh or frozen corn can be used

Method
 

Preparation Steps
  1. Pour 2 tablespoons of olive oil into a large pot and heat over medium-high for 1-2 minutes.
  2. Add 1 pound of lean ground turkey, breaking it up, and cook for about 5 minutes.
  3. Toss in diced medium red onion, 1 tablespoon chili powder, 1 teaspoon cumin powder, 1 teaspoon garlic powder, 1 teaspoon dried oregano, and salt and pepper. Sauté for 5 minutes.
  4. Add 1 can diced tomatoes and 1 can tomato sauce, then stir in black beans, kidney beans, pinto beans, diced jalapeños, and canned corn.
  5. Bring to a gentle boil, then reduce heat and let simmer for 20 minutes, stirring occasionally.
  6. Check consistency and stir in chicken stock or water if desired, adjust seasoning, and serve.
