Method
 

Cooking Instructions
  1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat until shimmering.
  2. Add 1 pound of sliced boneless, skinless chicken breast, seasoning with salt and pepper. Sauté for about 5-7 minutes until cooked through.
  3. Stir in 1 sliced onion, 4 minced garlic cloves, and 2 tablespoons of grated ginger. Cook for 2-3 minutes.
  4. Pour in 4 cups of chicken broth and 2 cups of water, stirring well. Increase heat to bring to a boil.
  5. Add 2 large julienned carrots and sliced bell pepper. Cook for about 5 minutes.
  6. Stir in 8 ounces of egg noodles and reduce heat to medium, cooking according to package instructions.
  7. Just 2 minutes before noodles finish, add in 2 cups of bok choy or spinach.
  8. Taste and adjust seasoning before serving.
  9. Ladle soup into bowls, garnish with green onions, and serve hot.
