Cooking Instructions
- Heat 2 tablespoons of vegetable oil in a large pot over medium heat until shimmering.
- Add 1 pound of sliced boneless, skinless chicken breast, seasoning with salt and pepper. Sauté for about 5-7 minutes until cooked through.
- Stir in 1 sliced onion, 4 minced garlic cloves, and 2 tablespoons of grated ginger. Cook for 2-3 minutes.
- Pour in 4 cups of chicken broth and 2 cups of water, stirring well. Increase heat to bring to a boil.
- Add 2 large julienned carrots and sliced bell pepper. Cook for about 5 minutes.
- Stir in 8 ounces of egg noodles and reduce heat to medium, cooking according to package instructions.
- Just 2 minutes before noodles finish, add in 2 cups of bok choy or spinach.
- Taste and adjust seasoning before serving.
- Ladle soup into bowls, garnish with green onions, and serve hot.
