- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a drizzle of oil over medium heat. Add the diced onion and sauté for about 3–4 minutes, or until translucent.
- Add the minced garlic and continue cooking for another minute.
- Add the ground beef to the skillet, cooking for 5–7 minutes until browned. Drain excess fat.
- Stir in the mixed vegetables and cook for 2–3 minutes. Pour in the cream of mushroom soup and mix.
- Transfer the mixture into a greased baking dish. Sprinkle shredded cheese on top and add breadcrumbs if desired.
- Bake for 30–40 minutes until the cheese is melted and bubbly.
