Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with butter or cooking spray.
  2. In a large mixing bowl, combine thawed hash browns with melted butter, 1 cup of shredded cheddar cheese, salt, and black pepper. Mix well and press into the bottom of the baking dish.
  3. Cook the sausage in a skillet over medium heat for 5-7 minutes until browned. Add chopped onion and green bell pepper, cooking until softened.
  4. In another bowl, whisk together the large eggs and milk until smooth. Season with salt and black pepper.
  5. Layer cooked sausage and vegetables over the hash brown base, pour the egg mixture on top, and sprinkle remaining cheese.
  6. Bake in preheated oven for 45-55 minutes until golden brown. Tent with foil if browning too quickly.
