- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with butter or cooking spray.
- In a large mixing bowl, combine thawed hash browns with melted butter, 1 cup of shredded cheddar cheese, salt, and black pepper. Mix well and press into the bottom of the baking dish.
- Cook the sausage in a skillet over medium heat for 5-7 minutes until browned. Add chopped onion and green bell pepper, cooking until softened.
- In another bowl, whisk together the large eggs and milk until smooth. Season with salt and black pepper.
- Layer cooked sausage and vegetables over the hash brown base, pour the egg mixture on top, and sprinkle remaining cheese.
- Bake in preheated oven for 45-55 minutes until golden brown. Tent with foil if browning too quickly.
