Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pierce each sweet potato with a fork and rub with olive oil. Sprinkle with salt and black pepper.
  3. Place sweet potatoes on a baking sheet and bake for 40-45 minutes until tender.
  4. Slice each sweet potato in half and fluff the insides with a fork. Add cinnamon and optional smoked paprika.
  5. Cook your eggs to desired doneness in a non-stick skillet.
  6. Top each sweet potato half with Greek yogurt, a cooked egg, and sliced avocado.
  7. Garnish with green onions/chives and drizzle with hot sauce if desired.
