Cooking Steps
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat until it shimmers, about 2 minutes.
  2. Add 1 pound of diced chicken breast to the skillet and cook for 5-7 minutes, stirring occasionally.
  3. Toss in 1 sliced bell pepper and 1 sliced onion along with 2-3 teaspoons of fajita seasoning and sauté for another 5-7 minutes.
  4. Prepare 2 cups of cooked brown rice according to package instructions.
  5. Start by placing a scoop of the cooked brown rice into serving bowls and layer on the sautéed chicken and vegetable mixture.
  6. Finish off your bowls by adding fresh toppings such as sliced avocado, a squeeze of lime juice, and a sprinkle of cilantro.
