Step-by-Step Instructions
  1. Gather all ingredients. Chop onions and beef into uniform pieces.
  2. Heat olive oil in a large pot. Sear beef cubes until browned on all sides, then set aside.
  3. Sauté onions in the same pot until soft and golden brown.
  4. Stir in tomato paste, cinnamon, and bay leaves, cooking for a few minutes.
  5. Deglaze the pot with red wine, scraping the bottom for flavor.
  6. Return the beef to the pot, adding enough liquid to cover, and bring to a boil.
  7. Lower heat and let simmer gently for 2-3 hours until tender.
