Step-by-Step Instructions
  1. Generously season the beef chuck roast on all sides with salt, black pepper, and garlic powder. Let it sit for about 10 minutes.
  2. Place sliced onions at the bottom of the slow cooker and lay the seasoned chuck roast on top.
  3. Mix beef broth, brown gravy mix, and Worcestershire sauce in a bowl until combined, then pour over beef and onions.
  4. Cover the slow cooker and set to cook on low for 8 hours.
  5. Remove the beef and whisk cornstarch with water for a slurry, then stir into the juices to thicken the gravy.
  6. Shred the beef after thickening the gravy and return it to the slow cooker to warm together.
  7. Serve the beef and gravy over prepared mashed potatoes.
