Step‑by‑Step Instructions for Vegetarian Three-Bean Chili
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat for about 2 minutes until shimmering.
  2. Add 1 diced onion to the pot, stirring frequently for about 5 minutes until translucent. Then add 2 minced garlic cloves and 1 cup of chopped bell peppers, sautéing for an additional 3-4 minutes.
  3. Add 1 can each of drained kidney, black, and pinto beans, along with 1/2 cup of salsa to the pot. Stir everything together thoroughly.
  4. Sprinkle 1 teaspoon each of cumin and chili powder into the chili mix, then season with salt and pepper to taste.
  5. Pour in 1 to 2 cups of vegetable broth depending on your desired consistency of the chili. Bring to a gentle simmer.
