Ingredients
  

For the Veggies
  • 2 medium Zucchini thinly sliced and salted
  • 2 medium Bell Peppers sautéed
  • 3 cups Spinach lightly sautéed
For the Cheese Mixture
  • 15 ounces Ricotta Cheese or cottage cheese for extra protein
  • 1 large Egg to bind the mixture
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Italian Seasoning
  • to taste Salt
  • to taste Pepper
For the Toppings
  • 1 cup Parmesan Cheese can mix with other hard cheeses
  • 2 cups Mozzarella Cheese adjust to preference

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Sauté bell peppers in olive oil for 5-7 minutes until soft, then add spinach and sauté until wilted.
  3. In a mixing bowl, combine ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread a layer of the ricotta mixture on the bottom of a greased baking dish.
  5. Layer noodles or zucchini slices, sautéed vegetables, remaining ricotta mixture, and sprinkle with mozzarella.
  6. Cover with foil and bake for 25 minutes, then uncover and bake for another 10-15 minutes until cheese is golden.
  7. Let the lasagna rest for 10 minutes before serving.
