Step-by-Step Instructions
  1. Cut the boneless, skinless chicken thighs into 1-inch cubes and season with salt and pepper.
  2. Whisk together BBQ sauce, honey, garlic powder, onion powder, and smoked paprika.
  3. Rinse the long-grain rice under cold water until it runs clear.
  4. Combine rice and chicken broth in a saucepan, bring to a rapid boil, then simmer for 15-18 minutes.
  5. Heat oil in a skillet over medium-high heat and sear the chicken cubes until golden brown.
  6. If using, sauté mixed vegetables in the skillet for a few minutes.
  7. Pour in the Honey BBQ sauce, return the chicken to the skillet, and simmer for 8-10 minutes.
  8. Fluff the cooked rice, spoon onto plates, and top with chicken and vegetables.
