- Rinse 1 pound of medium shrimp under cold water and pat dry. Sprinkle Cajun seasoning over shrimp and let marinate for at least 10 minutes.
- Melt 3 tablespoons of unsalted butter in a large skillet over medium heat. Add 2 tablespoons of honey and whisk to combine. Let bubble for about 1 minute.
- Add marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, then flip and cook for another 2-3 minutes until cooked and firm.
- In a separate saucepan, bring 4 cups of water to a boil. Whisk in 1 cup of stone-ground grits. Reduce heat to low and simmer for 20-25 minutes, stirring frequently.
- Stir in 1 cup of smoked gouda cheese and ½ cup of milk or cream into the grits. Mix until smooth and season with salt and pepper to taste.
- Serve creamy gouda grits topped with Honey Butter Cajun Shrimp and garnish with chopped parsley or green onions.
