Step-by-Step Instructions
  1. Season the beef chuck roast generously with salt, pepper, thyme, and rosemary.

  3. Prepare the vegetables: wash and chop the potatoes, peel and slice the carrots, slice the onion, and mince the garlic.
  4. Layer the vegetables in the slow cooker, starting with potatoes, followed by carrots, onion, and garlic.
  5. Place the seared roast on top of the vegetables, then add beef broth and Worcestershire sauce.
  6. Cover and cook on low for 8 hours.
  7. Remove the roast, let it rest for 10 minutes, then slice and serve with vegetables.
