Ingredients
  

For the Custard
  • 6 large Egg Yolks Optional: additional whole eggs for lighter texture
  • 2 large Whole Eggs Avoid overbeating
  • 1 cup White Sugar Can substitute with coconut sugar

  • 2 ½ cups Whole Milk Almond milk can be used for dairy-free option
  • 1 ¾ cups Heavy Cream Coconut cream can be used for vegan version
  • 7 oz Dark Chocolate Use at least 70% cacao
For the Tart Base
  • 1 cup All-Purpose Flour Gluten-free flour mix can be used
  • cup Icing Sugar Regular sugar can be used but will alter texture
  • ¼ cup Cocoa Powder Ensure it's unsweetened
  • ¼ teaspoon Salt Balances sweetness of the tart
  • 1 stick Butter Vegan butter can be substituted
  • ½ teaspoon Vanilla Extract Almond extract can be used for unique flavor
For the Glaze

Method
 

Prepare Chocolate Custard
  1. In a large mixing bowl, whisk together the egg yolks, whole eggs, sugar, cornstarch, and salt until smooth.
  2. In a saucepan, heat the whole milk and heavy cream over medium heat until it begins to simmer.
  3. Gradually whisk the hot milk mixture into the egg mixture, stirring continuously.
  4. Melt the dark chocolate until smooth and fold into the custard mixture.
Make Tart Base
  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, icing sugar, cocoa powder, and salt in a bowl.
  3. Mix the melted butter and vanilla extract, then combine with the dry ingredients to form a dough.
  4. Press the dough into a tart pan and blind bake for 15-20 minutes.
Combine and Bake
  1. Pour the prepared custard into the baked tart shell.
  2. Bake at 350°F (175°C) for 30-35 minutes until custard is just set.
Cool and Glaze
  1. Allow the flan to cool at room temperature for about 30 minutes.
  2. Cover with plastic wrap and refrigerate for at least 4 hours.
  3. Before serving, brush with jam for a glossy finish.
Serve
  1. Gently remove from tart pan, slice, and serve.
  2. Optionally dust with cocoa powder or add whipped cream.
