Prepare Chocolate Custard
- In a large mixing bowl, whisk together the egg yolks, whole eggs, sugar, cornstarch, and salt until smooth.
- In a saucepan, heat the whole milk and heavy cream over medium heat until it begins to simmer.

Make Tart Base
- Preheat your oven to 350°F (175°C).
- Combine the flour, icing sugar, cocoa powder, and salt in a bowl.
- Mix the melted butter and vanilla extract, then combine with the dry ingredients to form a dough.
- Press the dough into a tart pan and blind bake for 15-20 minutes.
Combine and Bake
- Pour the prepared custard into the baked tart shell.
- Bake at 350°F (175°C) for 30-35 minutes until custard is just set.
Cool and Glaze
- Allow the flan to cool at room temperature for about 30 minutes.
- Cover with plastic wrap and refrigerate for at least 4 hours.
- Before serving, brush with jam for a glossy finish.
Serve
- Gently remove from tart pan, slice, and serve.
- Optionally dust with cocoa powder or add whipped cream.
