For Frying
  • 2-3 cups Neutral Oil Use a high smoke point oil
For the Glaze

  6. Step 6: First Fry - Fry chicken in batches for 3-4 minutes until golden, then drain.
  7. Step 7: Second Fry - Return chicken for a second fry at 350-360°F for 2-3 minutes.
  8. Step 8: Prepare Sauce - Sauté ginger and garlic, mix in glaze ingredients, and simmer.
  9. Step 9: Thicken Sauce - Stir in cornstarch slurry to thicken the sauce.
  10. Step 10: Toss Chicken - Toss fried chicken in the simmering sauce to coat.
